AOKISHUZO The Sake Brewery’s “Kakurei” is characterized by flavors that complement the local food culture of Uonuma. It is a sake that pairs well with Uonuma cuisine, which includes preserved foods like dried fish and pickles that can be stored throughout the winter, and is flavored primarily with salt and soy sauce, preferred by the hardworking people of Uonuma who often sweat while they work. “Kakurei” is crafted in Niigata’s signature clean and crisp style, yet it maximizes the natural umami of the rice, aiming to create a label that never tires the palate.
